Substituted white whole wheat flour and decreased the butter in this yummy-looking recipe found on Pinterest. Can you really lose if using Nutella?
Zucchini Nutella Muffins
Ingredients:
1 ½ c white whole wheat flour
½ t salt
½ t baking soda
1 t baking powder
½ t cinnamon
½ stick butter, softened
¼ c applesauce
¾ c sugar
1 extra large egg
1 c grated zucchini
zest of one lemon
~½ cup Nutella
Preheat the oven to 350. Line a 12 cup muffin tin with paper liners. In a large bowl, combine the flour, salt, baking soda, baking powder and cinnamon. Whisk to combine.
Using an electric mixer, cream the butter, sugar, and applesauce together until light and fluffy. Beat in egg. Add the dry mixture to the wet mixture in thirds until just combined, then stir in the zucchini and lemon zest.
Fill muffin cups 2/3 full, and dollop 1 teaspoon of Nutella on top of each scoop. Swirl with a toothpick. Bake for approximately 15-20 minutes. Muffins are done with a toothpick inserted in the middle comes out clean.

Do you think I could make these with yellow squash (a yellow zucchini)? They're taking over my garden and I need some yummy recipes for them.

I love your substitutions. These look fantastic! I actually have all the ingredients and that zucchini needs using up so I'm going to save the recipe to try. The nutella on top looks so pretty! Not to mention delicious :D

I imagine that any summer squash would work well in these; if you try yellow squash, let me know how they turn out! :)

Just made these today and they are amazing! I love that there is Nutella on top of them! It was kind of hard to swirl the Nutella since it is rather thick, but the taste made up for that :) Thank you for the recipe!

Danielle-- I use the Canon 5D Mark II as of April of this year. Awesome camera. Used the Canon Rebel xTi before that.

Sorry for not responding earlier! I have always used Canon DSLR's, but have pals with Nikons and Pentax's. The Canon Rebel series is a great for a first DSLR/hobbyist photographer. I'd recommend the Ti1 and the 50mm f/1.8 lens. The latter is a bargain and gives beautiful bokeh when shooting wide open. There are lots of helpful reviews for both the camera and lens on Amazon.

I know this recipe has been out here for a while, but I wanted to respond to the person who posted that she had a hard time swirling the Nutella. If you heat the nutella up a little in the microwave first, it becomes thinner and easier to swirl!
